Tasting Notes
Viticulture
This Sauvignon Blanc is made from the combined crops from our two vineyard blocks. The fruit was harvested at the maximum flavour maturity and physiological ripeness.
Wine Making
The hand-picked grapes were wholebunch pressed without skin contact. The juice was then fermented at cool temperature in stainless steel tanks to preserve the freshness and varietal character of Sauvignon Blanc.
A small portion of the wine was fermented in French oak barrels to impart some mid-palate roundness. No malolactic fermentation occurred. There was minimal fining and sterile filtering before bottling.
Aroma

An aroma of gooseberries, lemon and grapefruit with mineral undertones.

Palate
|
A fresh palate with fl avours of citrus fruit and gooseberries. This wine has a rich mouth feel, balanced texture and a long lingering finish

Cellaring Potential
|
For current drinking but will age for two-three years. Serve chilled.

Food Match
|
Fresh shellfi sh such as scallops or oysters or other delicious seafood dishes would be ideal partners for this luscious wine.
